Prep time: 10 mins
- ½ papaya or 1 large mango
- a small bunch of coriander, chopped
- juice of 2 limes
- 1 red chilli, chopped finely
- pinch of sugar
- Peel the papaya or mango then either shred with a vegetable peeler or finely slice into ribbons.
- Place in a bowl with coriander, lime juice chilli and sugar and gently mix together.
- Refrigerate if not using at once. Best served the day it is made.
