Guava Tart - Fusion Cuisine


12 ripe guavas or mangoes peeled and sliced
450ml water
125g brown sugar
1 egg beaten
Short crust pastry (see recipe)


Peel and slice guavas or mangoes
Mix water and sugar in a saucepan place on a medium heat when sugar has dissolved add fruits cook for approx.10 minutes
Remove fruit from saucepan and set aside
Allow liquid to boil n reduce to a syrupy consistency
Pre-heat oven to 200c/400f/gas mark 6
Roll half of short crust pastry and line a 23cm/9in flan ring
Fill with prepared fruit, pour cooled syrup on fruit
Roll out remaining pastry and cover fruit
Crimp the edges of pastry to seal in the filling
Make 3 slits in top of pastry (to allow steam to escape)
Brush top of pastry with beaten egg to form a glaze
Place into oven and bake for 10 mins, lower oven temp to 180c/350f/gas mark 4 continue to cook until top is golden approx.30 mins
